Basic Sweet Bread – The Breadmaker Bible (used for campfire dough twists)

First cub scout session of the term and a few new joiners so we decided to do a campfire in the woods. We focused on sweet cooking this time so I’ve been trying to think of new ideas and it occurred to me to make a sweet dough for dough twists, I got this dough recipe from The Breadmaker Bible. To make dough twists you get a lump of dough, draw it out and twist around the end of a long hazel stick then cook over the camp fire, turning every so often so it cooks on all sides, (cooking should be over hot embers not flames). The cubs love cooking dough twists, the sweet dough was popular with the majority but a few preferred plain dough which they then spread jam on. We had 18 cubs plus two teenage helpers. Two batches of sweet dough and one of plain was plenty and we had a little dough left over.

One of our new cubs had left his torch. We knew he’d never done campfire cooking before as he’d told us during the evening. I emailed his mum to tell her about the torch and to check he’d enjoyed himself as it was his first session and this is the reply I got

‘…Yes he had a lovely time – came home saying it was the best day of his life!!!!’

Although getting set up to cook on a campfire with the cubs is quite a bit of effort it was a lovely reminder how much children enjoy it.

Ingredients

  • 125ml/4 fl oz/ 1/2 cup semi-skimmed milk
  • 125ml/4 fl oz/ 1/2 cup water
  • 1 large egg yolk
  • 3 tbsp melted butter, cooled
  • 4 tbsp sugar
  • 1 tsp salt
  • 450g/16 oz/3 cups strong white flour
  • 1 1/4 tsp instant or fast-acting dried yeast

Instructions

  1. Pour the milk and water into the breadmaker bucket, then add the egg yolk, butter, sugar and salt.
  2. Cover with the flour and sprinkle the yeast over.
  3. Set to basic dough programme.
  4. Sprinkle a little flour in base of plastic box to pack into for transporting up to the woods.
